IMPOSIBLE COCONUT PIE is so named because it seems
impossibly simple and tastes great....
2 Cups milk
¾ Cup sugar
½ Cup bisquick
¼ Cup butter (1/2 stick chunked)
4 Eggs
1 ½ tsp vanilla
1 Cup flaked coconut
Heat oven to 350 degrees. Lightly grease 9 or 10 inch pie plate,
preferably glass. Place all ingredients in blender. Cover and blend on
high speed for 15 to 20 seconds. Pour into pie plate. Bake until golden
brown & knife inserted in center comes out clean, 50-55 minutes.
Refrigerate any leftover pie.
For chocolate pie add 2 teaspoons cocoa. |
